Embrasse Restaurant was established by Nicolas and Tara Poelaert in February 2009. Our cuisine is built on the basis of French techniques, using excellent Australian produce sourced locally whenever possible. We let the seasons express themselves. We undertook a promise to each other that the search for quality ingredients would require an attentive selection from the farms, the bush, the sea, the rivers, the wild and produce growing in our region. We aim to deliver the very best quality we can to our customers through our cooking. Our idea of modern French is to create dishes with purity and simplicity which showcase great Australian produce. We use contemporary techniques in the kitchen which demonstrate the true flavour and texture of the ingredients. We aim to promote cuisine that is healthy and easily digested. We want to create a fine dining experience which expresses floral, earthy and fresh produce including herbs, flowers, grains, cereals and all kinds of beans. Vegetables play an important role in Embrasse’s kitchen and fill more room on the plate than is generally the case in other gourmet restaurants. We have a passion for gardening and foraging, growing many of our ingredients at plots in the eastern suburb of Melbourne, the kitchen team go to the market every week to buy the remainder of our vegetables
